Toss contents of 2 cans (184 grams each) spicy tuna in oil, 1 cup sweet corn kernels, drained, and 1⁄2 cup green peas snack with 1 bag romaine lettuce, torn into bite-sized pieces. Season with salt and ground black pepper, to taste. Serves 6
When your in-laws come over with just a one-day warning... Grilled Curry-Soy Chicken
Season 8 boneless chicken thighs with 1 teaspoon curry powder, and salt and ground black pepper, to taste. Skewer chicken along with zucchini, red onions, and cherry tomatoes before grilling. Baste it in the last minute with a mixture of 2 tablespoons honey, 1 tablespoon brown sugar, 1⁄4 cup soy sauce, 2 teaspoons curry powder, 3 minced garlic, and 1⁄4 teaspoon ground black pepper, for 10 minutes, or until cooked through. Serves 4
When good friends ask to come over (make them do the prep)... Tapa Rolls
Divide 2 cups cooked beef tapa, 3 scrambled eggs, 8 lettuce leaves, 4 tomatoes, deseeded and sliced, 1 cup singkamas sticks, among softened 8 rice paper sheets. Roll to close before serving with a spicy dipping sauce made of 2 tablespoon BBQ sauce, 1 teaspoon chili garlic sauce, 1 teaspoon honey, 3 tablespoons pineapple juice, and 1 teaspoon lemon juice. Serves 8
When you just want something different on movie night... Potato Salad ala Nachos
Toss 3/4 kilogram potatoes, cubed and deep fried, with 1/4 cup cheese spread, 1/4 cup grated cheddar cheese, 1/4 cup mayo, 1/4 cup prepared salsa, 1/2 cup sweet corn, and 1/4 cup black beans, rinsed and drained. Serve topped with 1/2 cup lightly crushed corn chips, 1 tablespoon chopped cilantro, and more salsa. Serves 6
When your kids' barkada come over... Tutti Frutti Crispies
Melt 1/4 cup butter and 5 2/3 cup mini marshmallows in a large pot over low heat until smooth. Mix in 1 teaspoon banana extract, 7 cups puffed rice, and 1 1/2 cups assorted jelly beans 3 pressing mixture into a 13x9x2-inch baking pan, greased and lined with foil. Cool completely and cut into squares. Makes 24
