  • Rice cookers are practically a must in every Pinoy household. A Filipino meal isn't complete without its serving of rice. But rice isn't the only food you can do in your rice cooker. There are quite a number of dishes you can whip up with it. If your rice cooker is automatic, just make sure, to check up on the dish every once in a while and press the cook button again when needed. Try it out with these recipes:

    1. Spanish Chicken Rice



    Let’s start simple with a dish that still has rice in it, but it can stand as a full meal on its own. The best part about rice cooker recipes is that once you put all the ingredients in, there’s little else to do but sit back and wait. Just remember, you may have to press the cook button several times if you’re using an automatic rice cooker to make sure your chicken is cooked all the way through.

    Makes 6 servings

    2 tablespoons butter
    1 medium brown onion, diced
    3 cloves garlic, sliced
    1 1/2 cups rice
    1 1/2 cups (375ml) chicken stock
    1 (400g) can chopped tomatoes
    1 teaspoon ground cumin
    6 (600g) chicken tenderloin
    1/2 cup chopped parsley

    2. Chicken and Daikon Soup


    Your rice cooker can even provide warmth on rainy days or comfort from a cold. Make this Chinese soup that's sure to hit the spot. Again, you will need to press down on cook several times for this recipe.

    Makes 2 to 3 servings

    500 grams chicken
    1 liter of water
    5 slices ginger
    300 grams daikon (white radish or labanos), peeled and cut in large chunks
    8 shiitake mushrooms, stems removed
    1 tablespoon wolfberries (goji berries), soaked in water until puffy; drained
    3 dried scallops
    Salt to taste

    3. Mac and Cheese


    Here's a super easy recipe you can make with the kids. Let them help you place all the ingredients in the cooker and then add in whatever extras they want like chopped vegetables (brocolli, carrots, peas, etc.), bacon or sausage. 

    Makes
    4 to 6 servings

    2 cups pasta
    1 1/2 cups chicken stock
    1 teaspoon salt
    1 cup whole milk
    1 1/2 cups shredded cheese (cheddar, mozzarella and monterey jack)

    4.  Sausage Jambalaya


    All you need for this rice meal recipe is six ingredients, all placed in your rice cooker pot. Perfect for lazy weeknight dinners! Feel free to add in chopped vegetables for a healthier option. 

    1/2 pound smoked sausage, thinly sliced
    1/2 can French Onion soup (about a ½ cup)
    1/2 cup water
    1 can diced tomatoes, undrained
    1 can blackeyed peas, undrained

    Get protein, carbs and vegetables in one dish with this frittata. By using a rice cooker, the dish comes out fluffy and creamy without the crusty outsides. Eat it on its own or put in a sandwich. 

    Makes 2 to 4 servings

    1 whole garlic clove, peeled
    1 small red or yellow pepper, diced
    1 small potato, peeled and finely julienned
    1 small zucchini, sliced into thin rounds
    sSalt and pepper
    2 tablespoons olive oil

    2 tablespoons grated cheese (optional)

    6.  Chocolate Cake



    Don't have an oven? You can make a cake with your rice cooker! Whip it up when you want a quick treat for a family member's birthday or as a snack on a lazy weekend afternoon. Top off with frosting, fruit or candy toppings or a sprinkling of powdered sugar. 

    Makes 12 servings

    1 1/2 cups white flour
    1/2 cup raw sugar (or just white sugar)
    4 tablespoons dark cocoa (powdered chocolate)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/4 teaspoon double-acting baking powder (leave out for heavier cake)
    90 ml sunflower oil (any oil may be used)
    1/2 teaspoon vanilla
    1 tablespoon vinegar
    1 cup water

    7.  Banana Pudding with Caramel Sauce


    In a tropical country like the Philippines, bananas are always in season. This may be your go-to dessert whenever you need to whip up something quick as you probably have all the ingredients needed to make this pudding in your pantry right now. 

    Banana pudding
    30 grams butter, melted, plus 60 grams extra
    2 tablespoons brown sugar, plus 1/3 cup extra
    1 small banana sliced, plus 2 extra, mashed
    1 egg, lightly whisked
    1/2 teaspoon ground cinnamon
    2 tablespoons milk
    1 cup self raising flour

    Caramel sauce
    300ml cream
    1/2 cup firmly packed brown sugar
    80 grams butter
