    Cherry Tomatoes with Blue Cheese, Honey Roasted Nuts, and Alfalfa

    What you’ll need:

    • 3 tablespoons heavy cream
    • 75 grams blue cheese
    • ½ cucumber, peeled, seeded and minced
    • 1 tablespoon chopped fresh parsley
    • 24 cherry tomatoes, with the centers taken out with a paring knife to form cups
    • 1 small bunch of alfalfa sprouts
    • ½ cup honey roasted peanuts, coarsely chopped

     

    Procedure:

    1. Combine heavy cream and blue cheese in a bowl.
    2. Add in cucumber and parsley.
    3. Place mixture in a piping bag with a wide-mouthed star tip.
    4. Pipe mixture into cherry tomato; top off with alfalfa sprouts and nuts.
    5. Store in refrigerator until ready to serve.
