• Pumpkin Love for Irene's Baby Love

    This is perfect for your little one and you can enjoy it, too. Squash is a very good source of carbohydrates. It is rich in vitamins A, B2, B6, C, and E. It also contains beta-carotene, Potassium, Phosphorus, and Iron.

    1 whole squash
    Olive oil
    4 cups water
    Salt and pepper to taste
    ½ medium onion, chopped
    1 teaspoon ginger, chopped
    4 cups chicken stock
    1 cup heavy cream (optional)

     

    Peel squash. Cut into chunks.
    Boil water with a little salt and pepper. Add the squash and cook until tender.
    Drain squash. Mash or puree with a blender.
    Sauté onion and ginger in a pan. Let it sweat for a few minutes to bring out the onion’s sweetness. Add the mashed squash.
    Pour in the chicken stock and let it simmer for about five minutes.
    You have the option of adding heavy cream. If so, let the soup come to a boil and turn off heat. Blend well.
    You may want to add other vegetables in the soup like carrots, potatoes, celery.
