  • Tomato and Pesto Pasta

    Already thinking of meatless dishes to serve this Holy Week? Here's one the kids will love: their favorite red sauce, but with a pesto twist:

    Ingredients:
    1/2 kilo spaghetti, cooked
    1 pouch or 250 grams Italian-style spaghetti sauce
    1/2 cup (80 grams) sun-dried tomatoes in oil, drained and sliced
    7 tablespoons Parmesan cheese

    For the pesto
    1/3 cup pine nuts
    2 cups or 40 grams fresh basil leaves
    1/2 cup extra-virgin olive oil
    6 cloves garlic, crushed
    1/2 teaspoon iodized fine salt (or     
    1/2 tablespoon iodized rock salt)
    1 tablespoon Parmesan cheese

    This dish takes 10 minutes to prepare, 15 minutes to cook, and serves 10
