No birthday’s complete without the cake, right? Make it special by ditching the store-bought cake and whipping one up yourself. If you don’t have an oven, don’t fret. These no-bake cakes are guaranteed crowd-pleasers and they're a breeze to make too.
1 No-Bake Mocha Mousse

Make an absolutely stunning mocha cake that's sure to impress even the most hard-to-please guest (like our mothers-in-law). Fluffy and silky smooth, it may take a while to make, but the result is worth it.
For the crust
1 (274-gram) box chocolate sandwich cookies (we used Oreos)
1/3 cup unsalted butter, melted
1 tablespoon gelatin powder
2 tablespoons cold water
1 1/2 plus 1/3 cups heavy cream, divided
3 large eggs, separated
2 tablespoons instant coffee
1 cup semisweet chocolate chips
2 tablespoons sugar
1 tablespoon confectioners’ sugar, sifted
Natural cocoa powder for sprinkling

The mango float fridge cake is always a party hit for guests, and those who make it because it can be frozen in the freezer or chilled in the fridge.
Makes 6 to 8 servings
300 grams broas or ladyfingers
1 tea bag earl grey tea
2 cups hot water
4 teaspoons white sugar
juice of half a lemon
1 cup graham cracker crumbs, crushed
100 grams butter
1 1/2 cups heavy whipping cream, whipped into stiff peaks
4 large mangoes, cubed
2 tablespoons coconut sugar

28 oz digestive biscuits, tea biscuits or other biscuit of your choice
1 cup nuts (walnuts, hazelnuts or other nut of your choice), toasted, slightly chopped
Chocolate syrup
1 cup sugar
1/2 cup unsweetened cocoa powder
1 cup water
2/3 cup butter
1 tsp vanilla extract
Chocolate ganache
1/2 cup whipping cream
4 oz bittersweet chocolate, chopped

2 cups graham crackers or biscuit of your choice
2 tsps ground ginger
1 tsp fine salt
3/4 cup unsalted butter
2 8oz/227g packs cream cheese
3/4 cup heavy cream
3 1/2 cups white chocolate
2 cup mangoes, diced

Cool and creamy, this strawberry cake by Faith Durand (author of Bakeless Sweets: Pudding, Panna Cotta, Fluff, Icebox Cake, and More No-Bake Desserts) was inspired by her favorite cake: the strawberry shortcake. It looks amazing and is actually pretty simple to make.
Makes 8 to 12 servings
2 pounds fresh strawberries, washed and patted dry
3 3/4 cups heavy cream, divided
1/3 cup powdered sugar
1 teaspoon vanilla
1/2 teaspoon rosewater, optional
4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
2 ounces dark chocolate, finely chopped
