“I came up with the cookie cups, where we bake the cookie dough in cupcake tins and put toppings,” Ivorie explains. “That’s one of the products that really clicked and everyone loved. Since then, we’ve been creating more and more toppings for our cookie cups and then the cookie cake line grew, and so on.”
“Everything just revolves around a cookie. Anything cookie-related, that’s what we make. People are asking if we make cupcakes or other kinds of cakes, no we don’t, because we really just want to focus on a regular chocolate cookie made into something different.” Prices range from P180 for the mini cookie cups, to P1700 for the cookie cakes.
Cookie Bar’s cookie shots are another product that Ivorie came up with as a tribute to the famous creator of the cronut, New York-based Dominique Ansel. These cookies are baked in the shape of shot glasses, with a chocolate-covered interior. Milk, or any beverage of choice, is then poured into the makeshift glasses for enjoyable sipping. What child would not experience comfort in sinking their teeth into chewy chocolate chip cookies, and gulping warm milk afterwards? And the joy of cookie dunking, too, might we add? For adults, they can try putting Bailey’s or Kahlua.
How does Ivorie keep coming up with different ideas for her cookie creations? She takes frequent trips abroad for what she calls “cookie research”.
While business is doing well, Ivorie is very much enjoying Cookie Bar’s order and pick-up setup, though for bulk orders, they can arrange deliveries. “We don’t see the need for a café or a dine-in area. So far, most of our products are brought to parties for sharing.”
