  • Going meatless for Lent doesn't mean you have to opt out of getting protein. Eggs are a great source of it and are allowed on days of abstinence (other animal-derived food like milk and butter can also be eaten). Here are kid-friendly egg recipes that are delicious and easy to make!

    1. Baked Eggs
    Starting off with one of the classic one-pan egg recipes, here's a recipe for baked eggs. Having marinara sauce (a.k.a. tomato sauce) and gooey melted cheese on top, the kids will be quick to love this dish. “Don't forget to serve with crusty bread!” said Yummy.ph.

    2 tablespoons olive oil
    1 onion, minced
    4 cloves garlic, minced
    2 180-gram cans canned diced tomatoes
    1/2 tablespoon salt
    1/2 tablespoon pepper
    1 tablespoon sugar
    fresh basil leaves, chopped
    4 medium egg
    quick-melting cheese, grated

    2. Carbonara with Sun-dried Tomatoes and Basil
    Who doesn't love carbonara, right? This recipe doesn't have meat but definitely still packs lots of flavor with sun-dried tomatoes and basil leaves. “The kids will love digging into this creamy dish,” said Yummy.ph. All you need is one pan too!

    500 grams
    4 eggs
    1/4 cup cream
    1/2 cup parmesan, grated
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/4 cup sun-dried tomatoes, thinly sliced
    2 tablespoons basil leaves, roughly chopped

    3. Egg Drop Soup
    As starter or side dish, whip up a quick egg drop soup. Easy and quick to make, this Chinese soup makes a good last-minute addition to a meal you feel is a little lacking. Try pairing it with fried fish!

    4 cups water
    1 chicken bouillon cube
    1 clove garlic, peeled, grated
    1 tablespoon fresh ginger root, peeled, grated
    1 tablespoon patis (fish sauce), or to taste
    1 large egg
    2 teaspoons sesame oil
    3 stalks green onion, sliced into 1-inch lengths

    4. Toaster Oven Baked Eggs
    Technically, you need ramekins for this recipe, not just one pan or pot, but you do serve the dish in those ramekins so that's still less to wash up. They're also cooked with a toaster oven — just the thing if you don't have a full-sized oven!

    8 eggs
    1 cup marinara sauce, divided
    1 tablespoon capers, drained (optional), divided
    1/4 cup whipping cream, divided
    1/4 cup parmesan cheese, divided
    salt and pepper

    5. Shakshuka

    “Shakshuka is a popular eggs-and-tomatoes dish in the Middle East,” said Yummy.ph. Cooked on your stove top, this makes for a hearty brunch, tasty lunch or light dinner. Pair it with toasted bread.

    1 small white onion, diced
    2 cloves garlic, minced
    1 red or green bell pepper, chopped
    1 400g can crushed tomatoes
    1/2 teaspoon cumin
    1/2 teaspoon cayenne
    1/2 teaspoon paprika
    Salt and pepper, to taste
    2-3 eggs
    Parsley for garnish
