  • Crispy Fried Chicken

    This is definitely a classic chicken recipe. Try out Irene Nicolas-Recio’s version.

  • fried chickenChicken is a very versatile ingredient.  And one of the favorite recipes of the young and old alike is Fried Chicken.  We all have our own versions.  Let me share with you mine.  Serve with or without gravy.  Perfect with rice, French fries, or mashed potatoes.  

    Crispy Fried Chicken

    You will need:
    •    2 lbs chicken (I usually use the leg, thigh, and wing parts because we’re red meat eaters, but chicken breast will do just as well)
    •    2 cups flour
    •    1 cup evaporated milk
    •    1 tablespoon black pepper
    •    1 tablespoon salt
    •    2 raw eggs
    •    3 cups vegetable oil for frying

    Directions:
    1.    Rub the salt evenly on all the chicken pieces.
    2.    In a bowl, combine the eggs and milk.  Beat well.  Set aside.
    3.    In another bowl, combine the flour and pepper.  Mix well.
    4.    Heat a deep pan and pour in the oil.
    5.    Dip the chicken in the egg-milk mixture, then in the flour-pepper mixture.  Make sure that the chicken is evenly coated with both mixtures.
    6.    When the oil is hot enough, put in the chicken.  Fry both sides of the chicken.  Cook in medium heat.
    7.    Put the fried chicken on a plate with paper towels to take out the excess oil.
