This is one of my favorite salads to make. It’s quick, easy and very nutritious and delicious, too. It has a sweet and sour flavor that adds a crunch with every bite. It’s perfect for a picnic on a hot summer day.
Picnic Food Side Dish: Apple’s Cold Salad
You will need:
¼ cup orange juice
¼ cup yogurt, unflavored
2 tablespoons mayonnaise (I like to use the sweet kind)
1 tablespoon calamansi juice
1 tablespoon sugar
1 cup cabbage, julienned
1 cup red cabbage, julienned
1 cup carrots, julienned
1 cup turnips, julienned
1 apple, cored and sliced into thin strips
1 cup chopped celery
1 cup seedless grapes, cut into halves
Directions:
In a bowl, whisk together the orange juice, yogurt, mayonnaise, calamansi juice, and sugar.
Add the cabbage, carrots, turnips, apple, celery, and grapes. Mix well to make sure that everything is covered with the dressing.
Put in a sealed container and refrigerate.
Served best when chilled so make sure to bring a cooler with you to put the salad in as you travel to your picnic destination.
