This Is Going To Be Your Go-to Dish For Grill Weekends

  • Quick-cooking shrimp always makes for easy-prep meals. Prep it during weekends (it's perfect for BBQ!) or the night before, and then just use an stove-top grill  to enjoy it for dinner. Serve it with fiber-rich dragon fruit for a tropical twist!

    Prep time: 40 mins
    Cooking time: 12 mins
    Serves 4 

    Here's what you'll need: 

    1 cup dragon fruit, chopped
    1 cup ripe mango, chopped
    1/4 cup shallots or red onions, chopped
    3 tablespoons cilantro leaves and stems (wansoy), chopped
    fresh lime juice, salt or fish sauce, and chili flakes, optional
    36 medium shrimps, peeled and deveined with tails left on
    vegetable oil, to grease
    salt and pepper, to taste

    Make it!

    Combine dragon fruit, ripe mango, shallots or red onions, and cilantro leaves and stems (wansoy). Add fresh lime juice, salt or fish sauce (patis), and chili flakes (optional). Cover and refrigerate until ready to serve.

    2 Thread 36 medium shrimps (peeled and deveined with tails left on) onto barbecue sticks, 3 pieces per stick. Season with salt and pepper.

    3 Preheat a charcoal grill or grill pan over medium heat. Lightly grease grates with vegetable oil. Grill skewers in batches for about 2 to 3 minutes per side or just until shrimps turn pink. Remove from heat and serve with dragon fruit-mango salsa.
