In a saucepan, sauté the garlic in olive oil. Add the tofu slices in the pan. Set aside.
Wash and peel the carrot and squash. Cut in chunks.
In a separate sauce pan, simmer the carrot and squash until cooked tender. Mash or pass through a blender or food processor.
Mix in the tofu with the vegetables and serve. You may choose not to puree the vegetables and mash them instead for a coarser texture.
