  • Irene's Tofu Twosome Treat

    Try this one-of-a-kind dish that combines the nutritional benefits of tofu and squash.

    • 1 package soft tofu
    • 1 carrot
    • ¼ piece squash
    • 1 clove garlic, chopped
    • Olive oil
    1. Slice the tofu in bite size pieces. Set aside.
    2. In a saucepan, sauté the garlic in olive oil. Add the tofu slices in the pan. Set aside.
    3. Wash and peel the carrot and squash. Cut in chunks.
    4. In a separate sauce pan, simmer the carrot and squash until cooked tender. Mash or pass through a blender or food processor.
    5. Mix in the tofu with the vegetables and serve. You may choose not to puree the vegetables and mash them instead for a coarser texture.
    Why It’s Good for Baby
    Squash is a very good source of carbohydrates. It is rich in vitamins A, B2, B6, C, and E. It also contains beta-carotene, potassium, phosphorus, and iron.

    Tofu (or bean curd) can be inserted in your baby’s diet at this stage. It is a good source of protein as a substitute for meat. Although it is very low in calories and fat, it is high in iron and calcium.
