In this Italian-inspired recipe, oregano is combined with lemons to lend clean, subtle flavors to fish. Although used in incredible amounts, salt merely operates as an “oven” to gently cook the fish.
For the salt oven mixture 4 egg whites 1/2 cup water 3 kilos rock salt
1 Preheat the oven to 450ºF. 2 Rub the outside of the washed fish with oil all over. 3 In a bowl, combine oregano and lemons. Stuff into fish’s stomach cavity and set aside.
