    In this Italian-inspired recipe, oregano is combined with lemons to lend clean, subtle flavors to fish. Although used in incredible amounts, salt merely operates as an “oven” to gently cook the fish.


    1 whole fish, cleaned
    1 tablespoon olive oil
    1/2 cup fresh oregano leaves
    2 lemons, quartered


    For the salt oven mixture
    4 egg whites
    1/2 cup water
    3 kilos rock salt


    1 Preheat the oven to 450ºF.
    2 Rub the outside of the washed fish with oil all over.
    3 In a bowl, combine oregano and lemons. Stuff into fish’s stomach cavity and set aside.
