Weekend Recipe: Tinapa Cream Sauce Pasta
  • If you're looking for a delicious meatless dish, here's a quick and easy recipe, a rich, creamy, and flavorful pasta topped with smoky, salty fish.

    Serves 4
    Prep Time 10 minutes
    Cooking Time 10 minutes  

    Here's what you'll need:

    4 to 5 pieces tinapa (smoked fish),  scaled, deboned, and flaked (about 1 cup)
    1 tablespoon olive oil
    2 tablespoons butter
    3 tablespoons minced garlic
    1/3 cup white wine
    2 cups all-purpose cream
    1 1/2 tablespoons lemon zest
    1 tablespoon lemon juice
    salt and pepper to taste 
    your choice of noodles: angel hair, fettuccine, linguine, or spaghetti

    Make it!

    1. Prepare pastea according to package directions.

    2. Heat a medium saucepan over low heat and dry-fry the flaked tinapa for a minute. Remove from pan and set aside.

    3. In the same pan, heat olive oil and melt butter. Sauté garlic until fragrant. Add wine and reduce to one-third. Add cream and tinapa; mix well. Cook at medium heat for 5 to 6 minutes or until slightly thick.

    4. Add lemon zest and juice. Season with salt and pepper and mix well.
