    5. Scientists discover protein that prevents ice cream from melting
Ice cream lovers, rejoice! Scientists from the University of Edinburgh in Scotland have discovered a protein known as the BsIA, a naturally-occurring protein that can slow down the melting process of ice cream. BsIA, which naturally exists in plant roots and is already used to ferment foods, helps bind together air, fat, and water in ice cream so it doesn’t melt. Plus, the protein can also give ice cream a smoother texture. However, expect this ice-cream innovation to hit the market in around three to five more years. (upworthy.com)
