southern fried chicken

1 kilo chicken
2 cups fresh milk
2-3 tbsp chopped garlic
salt
pepper
nutmeg

FIBS:
2 cups flour
3 pcs egg beaten
2 cups Japanese bread crumbs


marinate lang the chicken for 1-2 hours inside the ref then dip in flour, egg and bread crumbs then deep fry.

Another recipe that i do is:

1 kilo chicken
2 tbsp soy sauce
5-6 pcs kalamansi (get the juice)
salt
pepper
and a little bit of chili powder

SAme procedure then same breading pa din then deep fry.

sis, try this recipe

1/2 k. chicken fillet or chicken lollipop
1 1/2 cups all purpose flour
2 1/2 tsp. salt
1 tsp. ground pepper
2 tsp. garlic powder

depende kung gusto mong mas maanghang add pepper or salty add salt.

mommy ganu katagal i-mamarinate? pwede bang days or within the day dapat lutuin na?

try nyo rin sa alpine full cream milk i-marinate yung chicken (overnight naman kami nagmamarinade), then instead of egg ang pang-dip, margarine or butter. then saka yung flour. ;)

once fried, buhusan nyo ng mixed melted butter & sugar (hot sauce optional). yummy!  ;D

then isawsaw nyo sa ranch dressing.

pwede naman sis matagal i marinate pero pag milk ang marinate i suggest wag sobrang tagal kc baka masira or mag ka salmonela. of if mag mamarinate kayo do it in small batches or as consume lang para di parating tinithaw yung frozen chicken.

Thanks for the you tube link tansher! I just made my 1st chix lollipop for dinner pero hindi hit sa daughter ko because I spiced it with cajun seasoning. Pasado naman sa lahat but it's not a kiddie flavor I guess. I promised her I'll make it better next time.
Any suggestions how?

mommy  jazz, ako kasi before frying the chicken, hinihiwa ko sya especially yung bloody sa loob sa legs.then low heat lang sya.

i marinade my chicken sa patis at kalamansi, overnight lang para di masyado maalat.

Mommy jazz, ako naman ang ginagawa ko especially if galing sa freezer, pinakukuluan ko muna (para no blood ever) with chicken cubes (para malasa ang loob) then drain or towel dry first before dipping and adding the breading...pls take note mommy na better to dip and add the breading kung malamig na ang chicken kasi if mainit pa as in ka-aahon lang galing kulo hindi didikit ang breading...

sa pinagkuluan, you can make gravy out of it  ;) para walang sayang  :D

^ a friend shared the same secret. Boil the chicken muna not with chicken cubes (for the health conscious) but with lots of spices, enough salt and then dry din muna before breading. Her fried chicken is really wicked, ang sarap.  :)

just want to share... for juicy fried chicken on the inside and crispy on the outside... marinate the chicken pieces in yoghurt with all the spices (salt+pepper+herbs+garlic if you like) then coat with breading. i also add same spices added to yoghurt to the breading.

sis problem ko din to dati. pag nag fry ako ng chicken super crispy yung skin and yummy din pero yung sa loob bloody :-\. my hubby taught me a trick lalo na for busy moms like us. I deep fry the chicken then when you get the desired color and crispiness of the skin, take it out. put it in the microwave for 5 minutes. perfectly cooked chicken!  ;)

nasa temperature ng oil un mga mommies. dapat hindi masyadong mainit kasi mabilis lang magbrown pag sobrang init ng oil tapos hilaw pa sa loob. what i usually do is i put the stove on high to bring temp of oil up. then pag nakita ko na me konting bubbles na.. yung start palang mag-init, binababa ko na yung stove to medium. then start frying. mas matgal magbrown yung labas pero perfectly cooked inside.

hmm.. i'm here in brunei and meron available na prepared tamarind juice na. ginagamit kasi to sa malaysian cooking. i don't know if the sinigang mix will work, though. baka merong tamarind concentrate sa supermarket?

here's a recipe for sweet and sour tamarind chicken i found online. maybe you can derive the marinade from this recipe.

Ingredients
chicken pieces
Tamarind paste –2/3 teaspoon
Tomato Puree – 1 tablespoon
Red chilly powder – ½ teaspoon
All purpose flour –1/2 cup
Sugar –1 teaspoon
Salt- 1½ teaspoons
Vegetable oil for deep-frying
Water
Spring onion
Fresh coriander leaves

For the Sauce:
Tamarind paste –2 teaspoon
Soy sauce – 2 teaspoon
Water – 1 cup
Sugar –2 teaspoon
Salt ½ teaspoon
Roasted sesame seeds- 2 teaspoon
Red chilly powder – ½ teaspoon

Preparation
First of all make the sauce by mixing the tamarind paste, sugar, salt and chilly powder in water and bring it to a boil.
Keep the sauce aside and work on the batter now.
First of all mix the flour with the tomato puree, tamarind paste, red chilly powder, sugar and salt.
Mix the ingredients until you get a smooth batter and add water only if required.
Now heat the oil in a deep frying pan for about 2 minutes.
Now dip the chicken in the batter briefly and immediately deep fry.
Transfer the chicken on a dish covered with tissues to soak the excess oil.
Now, place the chicken on the serving dish, pour the tangy sauce over the nuggets and garnish with chopped spring onions and coriander.

I've tried  using sinigang mix nung nagturbo ng chicken. don't know if it will work din if you'll fry it..

How is chicken pandan made? May nabili ako sa SM Supermarket, fried it, hindi gaanong masarap. I tried the one at Jatujak Thai resto at MOA, sarap. It has been fried with the leaves still rolled on the chicken pieces. How do I marinade it? Before I bought a chix pandan mix, Mc Cormick ang label. It smells good while being cooked. Now hindi ko na mahanap sa supermarket. So now I have pandan leaves. I also have chicken pieces. What do I do now?

thanks for the thai recipe link. I was surprised we have all the ingredients at home and followed the fried chicken in pandan leaves recipe. OK naman lasa but I know I can do better next time and will make it tastier. Last week we ate at Jatujak and ordered their chix pandan. Kalasa nang luto ko.

mommyjazz, i dunno why yoghurt... I think derived from indian tandoori chicken na marinated in yoghurt before baked/grilled in tandoor oven. But i've been using yoghurt for fried chicken as well as breaded fish fillet like cream dory.

Good to know the recipe for chicken pandan worked. You can tweak it to get tastier chicken :)

Dunno jollibee style fried chix pero yung mc cormik na gravy pack taste like jollibee gravy. Ask  ko din kung pano gayahin yung KFC style fried chix, hindi ba piniprito yun sa pressure cooker?

^meron po akong recipe nung sa KFC kayalang naka save sa pc sa bahay... pdf file pa...  pero hindi ko pa rin  natatry gawin...  as far as i can recall, parang yung coating nila sa chicken, yun din ang ginagamit nila para sa gravy nila.

will check tonight...  :)

yung tamarind chicken pwede rin po ba lagyan muna ng breading bago iprito? or masyadong OA na ako kung gagawin ko yun?

yung tamarind fried chicken hindi na kelangan ng breading kasi magiging crispy na yun pag pinirito kasi nilaga na(max chicken ang effect)..

"Before you cook the chicken it has to be marinated.
The original way that the Colonel used to produce his
chicken was to marinate it. The following Marinate
recipe is still used today at KFC for the Crispy Strips
which are marinated daily in 40 to 80 lbs at a time,
however the amount of this marinade is only good for about 15 lbs of
chicken.

The Kentucky Fried Chicken Marinate:

2 tablespoons Potassium
2 tablespoons Kosher Salt
4 tablespoons MSG
1/8 teaspoon Garlic Powder
1/3 cup Bottled Chicken Concentrate
5 cups water

Mix all of the above and soak the chicken in the above marinate for
24 hours under refrigeration.

The Original Recipe is not packaged in three different places. The
way it is cooked and the process makes it taste like it has eleven
herbs and spices when in reality there is not. The way it is done in
the restaurant is using dried eggs and milk in the flour along with a

KFC ORIGINAL RECIPE:

6 cups Crisco Shortening

milk until fully moistened. Roll the moistened chicken in the flour
mixture until well coated. In groups of four or five, drop the covered
chicken pieces into the shortening and lock the lid. When pressure

Nagluto na rin ako nito mommy jazz.I used sinigang mix lang po and konting patis kung gusto mo.Add pepper.:)

Here is another fried chicken recipe that we love.We call it Maxx fried chicken.


Chicken cut into small pieces ( pwede din buo yung squab ng SM).Pakuluan nyo sa patis( not healthy though)
estimate nyo na lang na wag masyado marami.tapos paminta.Huwag po masyadong overcooked.Tapos deep fry na po ng ilang minutes lang.:)

I tried the Max's Chicken Recipe but mine's like this;

1 whole chicken, rubbed with salt and pepper (I tried using patis but the chicken meat tasted bland) leave for about an hour or if you have an ample time, REFRIGERATE (not freeze  ;D) it overnight.

Steam the chicken, when done, drain. You can pat dry the chicken but be careful not to rubbed off the pepper and salt along with the chicken skin.

Deep fry. This will only take a few minutes to brown. When you think you have the brown-fried you wanted you can remove it from the fryer already.

For the sauce:

In low heat, combine catsup and a small can of pineapple juice. Simmer. Serve with your chicken.

In addition to pompz question, minsan nakatikim ako sa party ng pinaupong manok. Yun daw ang tawag dun. Deep fried din. Kaya daw pinaupo kasi pinaupo sa asin kaya maalat (I Love salty foods kasi). Anyone knows kung pano yun?

Naka kulimbat ako sa net ng Jollibee Chicken Joy Recipe (daw).

So far, pwede na rin... 2x ko na ginawa  ;)

The ChickenJoy Marinate: Jollibee ChickenJoy (good for about 15 lbs of chicken)

My personal note:

For the marinade, wala akong bottled chicken concentrate. What I did was I dissolved 1 chicken bullion in 3/4 cup  hot water.

I didn't use shortening chorva - wala rin ako nun kaya mantika lang ginamit ko  ;D. Meron akong pressure cooker pero sa kawali lang ako nagprito. The usual 15-16 mins frying time lang sinunod ko or until golden brown.

Wala din akong paprika sa bahay. I just adjusted the amount of the ingredients. Ang hindi ko sinunod eh yung ratio ng garlic powder. I used almost 2 teaspoons para sa 9 pcs na servings ng chicken.

Patok sa family namen ang max's style fried chicken! Paano ba mag fry ng chix legs? Minsan kc hindi masyado luto ang loob. Or may ibang lasang hilaw o malansa.. help naman po...

Hi mga sis! Yung sakin simple lang pero gusto ng hubby ko at ng daughter ko. Half kilo chicken lollipop, mga 10pcs calamansi (juiced and seeds removed), patis or salt, pepper. Yung patis or salt tancha lang. Lagay ka paunti unti tapos tikman mo kung ok na sayo yung alat. Ako kasi gusto ko mas overpowered ng calamansi yung alat. Overnyt marinade mo lang. Yung breadding na gamit ko is tasty boy or crispy fry. Deep fry mo lang sya. Pag golden brown na, pwd na. Medium or low heat ko sya finafry para pati yung loob maluto na mabuti. Make sure all sides luto. :) ganun kasimple lang. Tapos ang sauce ay jufran ketchup or sweet chili sauce na both nabibili sa leading groceries. :)

sis low heat lang para pati loob ng chicken maluto. Malalaman mo kung luto na kung hnd na mashado matalsik yung oil

I tried a tamarind chicken at market-market. Fried chicken siya na maasim ang lasa. I liked it. Anyone knows how it's done?
sis, hnd ko pa natikman yung sa market market pero may family recipe kami na gumagamit din ng tamarind. Yung whole chicken lalagyan mo ng knorr sinigang sa sampalok mix. irurub mo lang sa chicken. After nun either iooven mo or microwave. Ang parents ko sa oven nila nilulito pero hnd ko pa natry. Kami sa microwave. High tempt for 45 minutes. Pag hnd pa luto, another 5 to 10 minutes. tapos check mo lang ng check kung luto na after 5 to 10 minutes. Kung hnd pa another 5 to 10minutea hanggang sa maluto. Yung marinade nun pwd na din sya tung sauce ng chicken mo. :)
