One of the simpliest icing frosting, especially for starters are non-dairy cream.
I buy mine sa chocolate lovers pero meron din nito sa rustans and sm supermarkets.
Try, Pour 'n Whip Non - Dairy Cream. Just pour mga 1 1/2 cup ng cream and
beat using a mixer in medium spead. No need for sugar kasi matamis na siya, you
may add food color if you want. hope this helps :)

Vanilla Buttercream

Ingredients:
1/2 c butter
1/2 c shortening
3-4 c confectioner's sugar/powdered sugar
1 tsp vanilla
2 tbsp corn syrup

1. In a mixer, put in the softened butter and mix in medium speed.
2. Add the shortening and mix it well.
3. Add the sugar, one cup at a time and blend it very well. Scrape the sides and fold it in to the rest of the mixture.
4. Add the vanilla and corn syrup. Blend very well. From here you can add food coloring to achieve your desired color.
5. Pipe it on to your cupcakes :)

buttercream cupcake icing:

1 stick butter (magnolia or anchor unsalted) softened at room temperature

2 box of confectioner's sugar (peotraco's confectioner's sugar)

3 tablespoon of milk (fresh or full cream basta liquid sya hindi powdered)

1 teaspoon of vanilla

- just mix the ingredients (consistency should be smooth enough para kumapit sa cupcake kung medyo runny sya add ng confectioner's sugar)  :D
- if you want chocolate variation add 1 cup of premium cocoa (cudbury masarap) ;D

eto Ingredients
•3 cups powdered (icing, or confectioner’s) sugar
•1/3 cup butter, softened
•1 1/2 teaspoons vanilla extract
•1 to 2 tablespoons milk
Preparation
1.In a large bowl with high sides, mix the icing sugar and butter with a wooden spoon or wire whisk, or an electric mixer on low speed. Add the vanilla and 1 tablespoon of the milk.
2.Gradually beat in just enough of the remaining milk to make the frosting smooth and spreadable. If the frosting is too thick, beat in more milk, a drop at a time. If the frosting becomes to thin, add more powdered sugar and beat

normally talaga icing for the cupcakes are soft.. made out of buttercream, ganache or whipped cream... pero meron din naman na fondant yung gamit.. kaso i think mas mahirap magdecor gamit ang fondant.. pero you could buy one of those sa gourdo's or sa sm sa may mga baking sections..or you could make one using marshmallows..

@mommychu: yup.. kaso for me di ko gusto lasa ng fondant. mas prefer ko pa din ang buttercream or raoyl icing sa cupcake. mas easier talaga gawin. anyway.. eto recipe for the marshmallow fondant.. hope this will help..

Recipe from Fondant 101

Makes about 3 lbs of marshmallow fondant

INGREDIENTS

16 ounces white mini-marshmallows
2-5 tbsp water
2 lbs powdered sugar
about 1/2 cup Crisco shortening, to grease hands and work surface

INSTRUCTIONS

Melt marshmallows and 2 tbsp of water in a microwave safe bowl. Put the bowl in the microwave for 30 second intervals (stir between intervals) for about 2-1/2 minutes until marshmallows are melted. Place 1 to 1-1/2 lbs of the powdered sugar on the top of the melted marshmallow mix.

Now grease your hands GENEROUSLY (palms and in between fingers), then heavily grease the surface you will be using and dump the bowl of marshmallow/sugar mixture in the middle.

Start kneading like you would bread dough. It will be VERY sticky at this stage! Add the rest of the powdered sugar and knead some more. Re-grease your hands and surface when the fondant starts sticking. If the mix is tearing easily or it is to dry, add water (about 1/2 tablespoon at a time). Continue to knead and add water until there are no bits of powder sugar visible. It usually takes about 8 minutes to get a firm smooth elastic ball so that it will stretch without tearing.

Prepare the fondant for storing by coating it with a good layer of Crisco shortening, double wrap with saran wrap and then put in ziploc bag. Squeeze out as much air as possible. Let rest overnight for best results.

mga sis, post ko lang ulit yung message ko sa other thread about sa recipe ng icing and cake decorating materials:
@ciscocameronaika- i hope this will help you.
1.  I know a very simple but yummy butter cream icing recipe.
1/3 cup butter in room temperature
3 cups confectioner's sugar
1 tsp vanilla extract
2 tbsps milk
food coloring
just mix them all together sis.  it makes a really yummy icing. yung food coloring you can buy the red one sa SM Supermarket din tapos konting konti lang ilagay mo to get a shade of pink. by drops lang ang lagay sis until you get your desired color.

2.  piping bag and tips
you can buy them sa SM Supermarket.  it's just 70 pesos for one icing bag and 4 different tips

3.  cupcake boxes
you can buy them from RM boxes or in Best Way in divisoria.  you can check RM website at rmboxes.multiply.com.  the one with acetate cover costs 10.50 each

4. cupcake toppers
sis meron sa divi yung ibang characters. may edible and non edible.  here is my sample cupcake so you can see the icing and the RM box.

@ciscocameronaika - sis i am not sure kung makakatulong ang cream of tartar e. yung recipe na binigay ko, nakakastay naman ng 3 days na hindi natutunaw. sturdy naman sya. yung tips po kasama na sa icing bag.  isang pack po sya.  yung egg white po i think is used for boiled icing. may recipe din ako nito from my mom pero hindi ko pa tried and tested. ang boiled icing tumitigas talaga and hindi natutunaw. for me kasi sobrang tamis nun.  corn syrup kasi ginagamit.

Post by: ravenwillis27 on October 29, 2010, 02:01:43 pm
^sis hindi ko pa tried and tested to mismo ha? sa mommy ko itong recipe na to hinukay ko pa sa baul  ;D
boiled icing recipe
beat 4 egg whites in high speed until soft peaks form
combine 1 1/4 cup sugar and 1/2 cup water in a saucepan.  cook without stirring in medium heat for 5 to 7 minutes.
combine the two mixtures and add1/4 tsp of cream of tartar. mix it again until it reaches the desired consistency.
balitaan mo ko sis pag succesful.  nagkamali ako wala palang corn syrup kasi gagawin mo pala yung syrup from scratch hehe. ;D

My favorite brand of pastry bag is the ATCO or ATECO. these are washable cloth type bags which are very good and last a long time., I also prefer the the 24-26 inch bag. as these hold a lot. Any kind of metal tubes are good.

-Spatula buntis is mura lang may 60 pesos akong nakita sa SM rubber

Here's mine...

1 c. sugar
1/3 c. water
1/3 tsp. cream of tartar
2 egg whites
1 1/2 tsp. vanilla

First mix sugar, water and cream of tartar in saucepan. Bring to a boil, stirring constantly until you have a string about 6 inches long on the end of the spoon. Beat egg whites until stiff peaks forms. Then slowly add sugar, water and cream of tartar mixture to egg whites. Beat until stiff.

it's not sweet..it's kinda old style na...put some coloring if you want a color...

@ciscocameronaika - sis you mentioned na 1/2 na plastic lang ng sugar ang nilagay mo? nakita ko sa box ng sugar mo 450 grams lang.  kulang yan sis for 3 cups na recipe.  sa baking kasi hindi pwede ang tanchahan.  you need to exactly measure as per the recipe para hindi pumalpak.  sobrang shiny ng icing mo sis kulang sa sugar.  matamis talaga ang butter cream icing.  too bad the recipe didn't work for you  :(

His Sis Raven,

Wish ko talaga makapag start magbaking, kaya sasamantalahin ko itong christmas holiday.Pasensiya sa mga tanong ko ha! Thanks ulit! ;D

ngredients:

1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
1 teaspoon clear vanilla extract
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk
Makes: About 3 cups of icing.

(Medium Consistency)

In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.

For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.

For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.

For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and add 1/2 teaspoon No-Color Butter Flavor. Add up to 4 tablespoons light corn syrup, water or milk to thin for icing cakes.

I tried once na kulang ng mga 1/8 cup ng sugar, tunaw sya sis as in! naubusan kasi ako ng supply that time.

hi sis its just white eggs.. nakagawa nako nito pero we used it to make merengue.

eto meron galing sa net... you can add coloring food to have various colors.
Ingredients

1 c. sugar
1/2 c. water
1 tablespoon light corn syrup
2 egg whites
1 tsp. vanilla
Method

Step 1

Combine the sugar, corn syrup and the water in a quart pot.

Step 2

In a separate mixing bowl, whip the egg whites until they are stiff and hold a peak. Set aside.

Step 3

Bring the sugar mixture to a boil and then to 238 degrees F.

Step 4

Pour the hot syrup over the egg whites in a steady thin stream, beating constantly.

Step 5

Add the vanilla and beat until cool and of spreading consistency. If icing does not seem stiff enough, beat in 2 or 3 tablespoons confectioners sugar 1 tablespoon at a time until stiff enough to hold its shape. Spread over your next cake and enjoy!

if you want something simpler, try making simple chocolate icing.  just melt some butter about 1 bar in a pan and add cocoa powder (yung semi-sweet or bittersweet).  just keep stirring para maging creamy yung consistency and that's it.  just take care na hindi mangingitim yung butter.  mas ok kung medyo soft muna butter para matunaw agad.

Ano ba effect pag over o under mix yung icing? Talaga bang parang medyo rough yung texture ng butter icing? Dami questions heheh ;D

And tight lang kc ang budget namin so as long as pwede ko naman gawin, ako nalang ang gagawa kesa bumili or magpagawa. tulad sa tower cupcakes. Balak ko bumili ng cupcakes like for example is whatta tops and it cost 5 pesos each. or kaya yung cheese cake ng lemon square 6 pesos each. ang plan ko is gagawa nalang ako ng icing na ilalagay ko sa top ng cupcakes pra maging presentable siya. then mag print nalang ako ng mga theme for baptism na pwede kong i pang decor sa cupcake.

Please help me naman mga sis kung Paano gumawa ng icing or kung meron kayo idea or meron mabibilihan sa store please let me know. hehe thank you inadvance.

A few drops first. Check mo muna if okay na yung color. If not, add a few more drops until you reached the desired color.  :)

I tried yung recipe ni sis ravenwillis27 na buttercream icing. Ang sarap! Tuwang tuwa naman ang anak ko. Gustong gusto niya with moist chocolate cupcakes. Ako din feel na feel ko. Haha!

been making buttercream frosting recently, but recipes i';ve been using result to runny frostings and won't hold up.

what should i do to make thicker frosting, aside from adding more sugar? thanks!
