For breakfast, Em Alcantara likes to prepare something refreshing with her daughter, Aria — like this tuna and apple sandwich.
“The apple gives a kick of juiciness in each bite, and it’s also perfect for any season and time of day,” she explained. It’s also a great way to sneak in some fruits!
Aside from this recipe, Em also shared how she helps Aria get ready in the morning for her online classes. For this mom, it’s important to prepare the child prior to the class as if they are actually going to school.
Em advised to set up early: ensure that the internet connection is stable and the laptop is fully charged so that any issues or technical problems can be addressed before classes begin.
After classes, Em said, parents should also check in with the child to find out how the lessons went, and see if there are assignments or things that have to be practiced or accomplished before the next class.
1 can tuna chunks in oil, drained
1 medium-sized apple, diced

How to make Mommy Angelica’s Egg Sandwich
Does your child love the classic egg sandwich? Angelica Castellon’s daughter, Rio, sure does! For moms with kids like hers, Angelica suggested mixing it up with different veggies and meats to make it even more appetizing for your child. 1 white onion, thinly sliced
1/2 teaspoon muscovado sugar
1/2 teaspoon salt
1/8 teaspoon ground black pepper

1. In a bowl, mash the eggs with a fork. Add white onion, sugar, salt, and pepper.

3. Add chopped arugula.
4. To serve: Spread the egg salad evenly over the wheat bread. Share and enjoy!
How to make Mommy Danna’s Shrimp Roll Sandwich
Danna’s tip to make mornings and online classes enjoyable for kids? “Let them sleep early so they can wake up early and eat breakfast before the class starts,” she said.

10 pieces medium to large shrimps, peeled
1/2 cup butter
3 pieces garlic cloves, minced
2 pieces medium onions, minced

1/4 cup lemon zest
1/2 cup celery, finely chopped
salt and pepper, to taste

1 small French baguette

1. Sauté shrimps in butter and garlic. When fragrant, add onions then set aside.

3. Toast the baguette until golden brown and set aside.
4. Mix the shrimps with the Lady's Choice Meaty Spread mixture, then add chopped parsley.
5. To serve: Spread 1 cup of the shrimp mixture onto the baguette. Garnish with parsley and a slice of lemon.
