    Calamansi Mimosa

     calamansi juice



    • 1 ½ cups water
    • 6 tablespoons calamansi juice concentrate
    • Sparkling water, flavored or unflavored
    • Fresh calamansi for garnish 



    1. The night before, mix water and calamansi concentrate and pour into a shallow, flat glassware. Place in freezer and leave overnight.
    2. In the morning, take out the frozen mixture and, using a large sturdy fork, flake the iced juice mix by running the fork across the frozen surface. Keep “scratching” the ice until it becomes a soft, icy mixture—very much like shaved ice. Return to freezer until ready to serve.
    3. When ready to serve, remove from freezer and run a fork through one last time to break up any ice chunks. Scoop the granita into tall glasses, then fill with sparkling water. Garnish with a sliced calamansi at the rim. Serve immediately.
