Ham Fried Rice
Here's what you'll need:
- 1 1/2-2 cups holiday ham, chopped
- 3 cups cooked rice
- 2 tbsp sesame oil
- 1 small white onion, chopped
- 1 cup frozen peas and carrots, thawed
- 2-3 tbsp soy sauce (more or less to taste)
- 3 eggs, lightly beaten
- 2 tbsp chopped green onions (optional)
Procedure:
- In a large frying pan over medium heat, sauté the peas, onion, carrots, and chopped holiday ham until tender.
- Slide the ingredients to one side of the pan. On the other side, pour in the beaten eggs and scramble. Once cooked, combine the eggs with the vegetables and ham mixture.
- Add the cooked rice to the pan, then pour soy sauce over the mixture. Stir everything thoroughly to ensure the vegetables, egg, and ham are evenly distributed.
- Top with chopped green onions if desired.
- Serve warm.
Ham Ranch Chicken
Here’s what you’ll need:
- 3 pcs holiday ham, diced
- 3 pcs boneless skinless chicken breasts
- 2 tsp ranch seasoning
- 1 ½ cups shredded mozzarella
- Salt and pepper to taste
- Chopped chives for garnish
Procedure:
- In a large frying pan over medium heat, cook the diced holiday ham until slightly browned. Set aside.
- Season the chicken breasts with salt and pepper. In the same pan, cook the chicken for about six minutes per side, or until golden brown.
- Sprinkle the ranch seasoning and shredded mozzarella on top of the chicken breasts. Cover the pan and cook for an additional five minutes, or until the cheese has melted.

Instructions:
- Preheat the oven to 350°F (175°C) and lightly oil or spray a 9-inch pie plate.
- In a large bowl, whisk the eggs with oregano and 1/8 tsp pepper.
- Stir in the shredded cheddar, holiday ham, tomato, bell pepper, and green onion until well combined.
- Pour the mixture into the prepared pie plate and evenly distribute the vegetables.
- Bake in the center of the oven for 25 to 30 minutes, or until the frittata is golden around the edges and firm when jiggled.
