Kids Will Want Veggies All The Time With These Homemade Dips!

  • I think I developed my love of dipping when I was a kid. I remember there was a time that I wasn’t so fond of eating protein of any kind. I can’t remember why, but I just know that I was adverse to eating chicken, pork, and even red meat.

    At some point, my dad figured out that if we dipped what we were eating in honey, we would eat a little more.

    How to use a dip to sneak in those veggies

    And so began my love affair with dipping, and I have passed it on to my kids. The following are our family's go-to dips, and I hope they can help you. Young kids love to eat with their hands and dipping food in something tasty often counts as an adventue. You may just sneak in those veggies without any fight.

    Roasted Vegetable White Bean Dip with Toasted Pita Chips

    Ingredients

    ½ cup cubed roasted zucchini

    ½ cup cubed roasted red pepper

    2 cans white beans, drained (set liquid aside)

    Juice of half of a lemon

    1 clove of peeled garlic

    2 tbsp extra virgin olive oil

    ½ tsp cumin

    1 tsp paprika

    1 tsp old bay seasoning

    Extra virgin olive oil to taste

    One pack of pitas cut into triangles and toasted until crunchy

    How to cook

    1. Toss the cubed zucchini and red bell pepper in olive oil, salt and pepper.

    2. Roast/toast the cubed vegetables in the toaster oven or air fryer until fork tender.

    3. Then toss all ingredients in the food processer and blend until smooth. If mixture is too thick, you can add some of the liquid from the beans back in to the mixture to smoothen it out.

    4. Be sure to toast the pita bread till crunchy pita chips. You can also toss these in EVOO, salt and pepper before toasting for added flavor.

    • You can substitute carrots for bell peppers and add a natural sweetness to the dip.
    • You can substitute garbanzos for white beans.

    8 oz cream cheese

    1 tsp garlic powder

    1. Mix all dip ingredients in food processer and serve with warm sweet potato pancakes.

    1 can drained garbanzos

    4 tbsp extra virging olive oil

    1 tsp cumin

    1 tsp turmeric

    ½ tsp salt

    ½ tsp pepper

    How to cook

    1. Toss all of the ingredients together and toast until crispy.

    2. You can toast in oven at 170°C.

    3. You can also toast in toaster oven or air fryer.
